Onda is a bone-dry, non-alcoholic amaro soda that drinks more like a lightly bitter sparkling lemonade than anything you'd shelve next to a root beer. Bright lemon and a saline coastal lift open it up, then wild sage and rhubarb root pull through a gentle, savory bitterness that lingers well past the swallow. With barely any sweetness (4g of sugar) and a crisp, white-wine-like minerality, it sits at the herbal-aperitivo end of the botanical-tonic family rather than the sweet cream-soda end. A refreshing, food-friendly pour for drinkers who like their sodas grown-up and a little bitter.

The maker
Casamara Club was founded in Detroit in 2018 by Erica Johnson and Jason LaValla to make non-alcoholic, amaro-inspired botanical sodas (which they call "leisure sodas"). They develop each recipe in Detroit, extracting botanicals individually before blending them, and produce in small batches. Onda is their dry, herbal Sicilian-amaro-style limonata, built on lemon, sage, and chinotto.
