The reconstructed classic — and the most forgiving place to start.

Modern root beer is built around methyl salicylate (the cool wintergreen-and-birch note), rounded with vanilla, lifted with a whisper of anise, and given backbone by sarsaparilla. Since safrole was banned in 1960, the old sassafras character comes from a safrole-free extract.

Step-by-step
  1. Heat about 2.0 L of water (half the batch).
  2. Stir in the flavor base (Sprecher root beer syrup (force-carb only), Vanilla (vanillin)) until fully dissolved.
  3. Dissolve the sweeteners (Brown sugar / molasses, Honey) into the warm liquid.
  4. Top up with cold water to 4 L and chill.
  5. Chill, then set the regulator to ~30 psi at fridge temperature and let it equilibrate 24-48h (pressure target is set-and-hold, independent of batch size).

Common questions

Why doesn't homemade root beer use sassafras?

Safrole, the main compound in sassafras root bark, was banned as a food additive in 1960 (21 CFR 189.180) as a carcinogen. Modern root beer uses a safrole-free sassafras extract plus wintergreen, vanilla, and sarsaparilla.

Is homemade root beer alcoholic?

Force-carbonated (CO2 or dry ice), it's alcohol-free. Fermented methods — yeast or a ginger bug — produce a trace of alcohol, typically well under 1%; it is not zero, so don't make non-alcoholic claims without testing.

What equipment do I need to make root beer?

How long does it take to make root beer?

Force-carbonated batches are ready after a day or two of chilling. Fermented batches take roughly 1–3 days at room temperature until carbonated, then go in the fridge.
