Bruce Cost builds this on its signature unfiltered base of 100% fresh ginger and organic cane sugar, so expect a hazy pour, a cloud of fine ginger sediment, and a genuine chemesthetic bite rather than the polite tingle of a mainstream ginger ale. Blood orange and Meyer lemon concentrates layer a bright, tart-sweet citrus over the rooty heat, pulling the profile toward fruit-forward without dulling the burn. Body is unusually full for the category and the finish is long and warming, with citrus acidity keeping it lively. A confident, craft-forward ginger ale that drinks closer to a true ginger beer than a soft soda.

The maker

Bruce Cost Ginger Ale was launched in 2010 by chef and Asian-cuisine author Bruce Cost, who had brewed his fresh-ginger recipe for years at his restaurants before bottling it commercially. The company (BCGA Concept Corp.) makes its unfiltered ginger ales from 100% fresh ginger rather than extract, and operates its own production facility in Bushwick, Brooklyn. The blood orange variant layers organic blood orange and Meyer lemon juice concentrates over that fresh-ginger base.
