A textbook cane-sugar cream soda built on pure vanilla extract, poured from Boylan's signature embossed glass bottle. It leans creamy and full-bodied with a clean vanilla aroma and a faint caramel-color warmth, carried by firmer carbonation than most cream sodas. The defining trait — and the recurring knock against it — is sweetness: it lands rich and dessert-like, rewarding to fans of the style but one-note for palates that want more restraint.

The maker

Boylan traces its roots to 1891, when Paterson, New Jersey pharmacist William Boylan blended a birch-bark elixir he sold by the cup from the back of a wagon. The brand passed from the Boylan family to its current ownership in the 1930s and built its modern identity around small-batch, pure-cane-sugar sodas in embossed long-neck glass bottles. The company is now headquartered in New York City and still bottles a full line of cane-sugar sodas, seltzers, and mixers.
